Forty years, photographed
The dishes we cook, the room we cook them in, and the island the recipes came from — the charcoal pit, the pass and the long tables at 128 Jalan Warisan, then George Town and the market rows beyond it.

Lunch service, family style
01 — Di Atas Meja
The Food
Twenty-two plates from an ordinary week. The rempah is ground every morning, the sambal is tumis-ed until the oil splits, and nothing is held over to the next day.
02 — Ruang Makan
The Room
Ninety-six seats, teak tables and ceiling fans. The room fills twice a day and empties slowly — most of our tables are booked by families who have been coming since the eighties.
03 — Dapur
The Kitchen
Everything difficult happens before the doors open. Rempah is pounded, stock is set, charcoal is lit at four in the afternoon for a grill that runs until closing.
04 — Pulau Pinang
Penang
The warung sits on the mainland side, a short drive from George Town. These are the streets, stalls and shophouses the cooking belongs to — the island and the Seberang Perai coast, not the warung itself.
Better in person
A photograph cannot carry the smell of the charcoal
